Soup season. A riff on Italian wedding soup: — basic sofrito of carrots, celery, and onion, — chicken broth, — spinach, — noodles, cooked separately, then added, — chicken meatballs, roasted in the oven, then added, — parsley and dill, dill, dill. It seems better to prepare noodles and meatballs separately rather than in the soup so they won’t absorb too much liquid.
