Food adventures continue!

Benin is represented by fufu with beef and red sauce. I quite enjoyed this - the fufu reminds me of mashed parsnip. Deviated from the traditional communal presentation and plated individual servings. Got to use this year's tomato sauce!

@ThunderHoney Okay, now we're talking? How did you make your fufu? I ate quite a lot of this when I was in Togo in the 90s and it was definitely a surprise.

I followed this recipe https://naptimeprepcook.wordpress.com/2018/09/08/benin-%f0%9f%87%a7%f0%9f%87%af-fufu-with-beef-and-red-sauce/ however, the cassava boiled for almost an hour and the consistency wasn't there so finished it off in the pressure cooker after the skin and core had been removed. It was good and two yucca roots made for lots of mash.

@ThunderHoney It's funny, I had fufu for about half my meals over a month and the sauce was never even once the same. Seems to be like rice in Asian cooking; primarily a vehicle for interesting sauces.
